Shepherd's Pie



This is a Pampered Chef recipe that is slightly edited, quick, easy, cheap, and tasty...like most of the other recipes I make!

MEAT MIXTURE
1 lb lean ground beef
1/2 cup onion
1 garlic clove, pressed
1/2 tsp salt
1/2 tsp dried thyme leaves
1/4 tsp ground black pepper
2 cups frozen mixed vegetables
1 (12oz) jar beef gravy

MASHED POTATOES
3 russet potatoes
1/2 cup shredded cheddar cheese
Butter, milk, salt, and pepper as desired

1) Chop potatoes into chunks and place in pot with water; bring to a boil. Reduce heat to medium and cook 10 minutes. Drain. Mash/beat with butter, milk, salt, and pepper as desired as well as 1/2 cup shredded cheddar.

2) While potatoes are boiling, brown ground beef with chopped onion and pressed garlic. Drain; return to pan and add seasonings listed in "Meat Mixture." Add frozen vegetables and gravy to pan. Bring mixture to a boil; spoon into baking dish.

3) Turn broiler on high. Spoon mashed potatoes over meat mixture, leaving a circle in the center (see photo). Broil in oven until peaks of potatoes are browned.

NOTES:
~You can either peel the potatoes or leave the skins on. Depends on if you want creamy mashed potatoes or rustic.
~It took me about 10-15 minutes to broil. Make sure you just watch it -- broiling can be tricky!

I love me some shepherd's pie. This is slightly different than mine...but still tasty.
