Lentil & Spinach Soup
Here's another recipe using lentils. Some people are unfamiliar with this economical nutritional powerhouse, but you should try it! Seasoning is key, or you probably won't enjoy lentils. This recipe makes quite a large amount which is great for leftovers.
LENTIL AND SPINACH SOUP
1 Tbsp oil
2 medium onions, diced
1 tsp. minced garlic
4 stalks celery, plus hearts, diced
2 medium carrots, diced
1 1/2 tsp. dried basil
1/2 tsp. dried thyme
1 large bay leaf
2 cups brown lentils, washed
1 tsp. salt
1/4 tsp. black pepper
4 cups spinach leaves, washed, coarsely chopped
Heat oil in soup pot over med-high heat and saute onions, garlic, celery and dried herbs until the vegetables begin to soften. Add lentils and 2 quarts of water to the pot. Raise heat to high and bring to boil. Lower heat to a simmer and cook 15-25 minutes, or until lentils are done.
Add salt, pepper and spinach. Mix well. Taste soup and adjust seasonings as desired.

I guess Autumn likes lentil! All these recipes look soo yummy! I might just have to try some...
I like lentils because they are cheap and very good for you... and they're odd. Not many people know what to do with them.
Will have to try, I know they are so good for you, but never saw a recepie that looked good=)
